Adapted from HungryGirl.com. Hungry Girl is a genius when it comes to recipe conversions! To make it specila use a short, sweet Persian cucumber. Add a dash of lemon pepper seasoning, too!
Here is a favourite recipe of mine, it's packed with nutrients, and really easy to make with whatever veggies or meat you have on hand, or you can leave the meat out for vegetarian fare....
I actually used a cut called "Sandwich Steak" at my grocery store, I couldn't find it on here though, so I put in the flank steak cut.
The bibimbab sauce is actually a red pepper paste mixed with sesame oil, that can be found in most Asian markets (or if you have a really great International Section in your supermarket). If you find just the paste, then add a bit of oil at a time til you get a taste you like :)
I used my steamer for my rice and chopped veggies while the meat cooked, great multi-tasking lol...
The key ingredient for the proper flavour is the sesame oil! I tried to sub different oils, but it just doesn't taste very good, unless it's sesame.
I think the egg is the icing on this recipe, it makes it very authentic! (I lived in South Korea for a year, and ate this every other day!)
This is very filling, if I eat a serving for lunch, it really takes me past that 3:00 Snack Monster, I think because of the protein in it :)
This is my regular pasta salad with 6 ounces of pepperoni and romano cheese. Pepperoni adds mostly fat, salt, and a little protein, so feel free to leave it out. I think it adds something extra to the flavor as long as it's consumed in moderation.
Any beans may be used in place of the pinto beans. See the basic pasta salad for a list.
This is a very easy, quick tuna salad. It's my bf's favorite. :-) I think it'd be a good recipe for kids and outdoor parties, too. Especially since it doesn't have icky things like celery.
Easy to multiply to fit # of guest. You may want to use shrimp or lean beef that has bee grilled; however, you will need to adjust the calories to accomidate the different protein.
This is my mom's heathiest version of the classical French. It has a nice twist, by replacing part of the poatatoes with sweet potatoes and of course her favourite, the Smart Balance Light Buttery Spread
I made this with a fresh stock I made from the carcass of a whole turkey breast. The stock makes ALL the difference! I used all nice fresh produce so I jarred 6 pints of thiswith my pressure canner to put in the pantry, because it was so yummy!
This is my take on a traditional Vietnamese spring roll . Sometimes known as Summer or Imperial Rolls. A hand roll (not fried) with fresh ingredients. Great Flavor , infinite options and versions by your choice of herbs and sauces.
I use this when I am in a hurry or just want something light on a hot day. My husband also likes it in his work lunch. It's fast and easy.

this is a quick and easy lunch. it's also one of my favorites! don't be afraid of the fat; it's healthy fat from grapeseed oil and avocados.
I love this recipe because it is 3 easy ingredients heated together and you're eating in 15 minutes max. If you are like me, you try to cook on the weekend and have stuff you can throw together when you get there. If you have the time, you can cook the rice, it just adds time.
