Definitely not low cal or low fat, but very delicious and satisfies the need for Mexican food! One enchilada is satisfying and about 330 calories.
This is quick and easy to make, and tastes really good as well. Makes 10 servings of one pizza each.
This is one version of the chili I make. I throw in whatever kind of beans I have in the cupboard. eg: black beans, chick peas, etc. You can also add peppers or more onion and garlic if you like. Also turn up the heat to your taste :) adding jalepeno peppers or hot sauce.
I used to eat this as a little kid all the time and thought i would share a mexican favorite.
Just remember one rule about picking jalapeno peppers:
The rounder the end the milder the pepper. The pointier the end the hotter the pepper.
I have only made these in a fry daddy, don't know if it will work by skillet frying or baking.
Here is healthier version of a generally heavy tex-mex dish.
