This recipe uses Chorizo de San Manuel(Edinburg, TX) and eggs and uses Corn tortillas instead of flour
I used wheat tortillas for the regular flour ones.
This recipe is much easier that it looks because the beans and vegetable stock are just 1 can each but it would not let me put that. This is a great make ahead to use for lunch all week or to make burritos to freeze. This filling is not bland at all and super healthy.
This entire soup is made with Trader Joe's organic canned products.
I made these for a lenten Friday meal and they were absolutely wonderful. The extras can be frozen in quart size freezer bags (3 will fit in a bag) and heated in the microwave at for about a minute to a minute and a half. You can add chicken or pork or any other left over meat to the mix as well!
