A gluten free, dairy free recipe for a yummy tropcial muffin! Can be made egg free (and therefore vegan) by substituting 1 TB flaxmeal and 1 TB water for the egg.

This is a recipe that I got off one of the Weight Watcher's free handouts and decided to share. It was very good and relatively easy to make. I didnt add the parmesan cheese (I forgot) but the dish missed nothing by not having it. I used it as a side with a small pork chop I cooked up and it went perfectly.
Top with cheese cubes, enjoy with a roll and this is a complete meal. Add some extra black pepper to give it a nice kick in the winter time!
Something I whipped up when I was craving a dessert and needed carbs, and had some fresh lemon lying around. Quick, easy, yummy, and healthy.
You can use any 98% fat free cream soup you like. You can also add veggies to this sometimes I will add a cup of broccoli with the rice and chicken.
With nearly 40g of protien, this is one of the best vegan pre-workout breakfasts ever!
