I can't take credit for these, the original recipe I used was submitted by SP user NORRISJT. It made only 6 muffins, used oil and 1% milk. I played with it a bit, to lower the fat and make 12 muffins in a batch. When I was happy with what I had, I couldn't find the original to do a makeover, so I am submitting this version.
This is very spicy.... you will need lots of water in your cup and pobably some ice when you eat it. You know what they say about spicy foods though, they speed your metabolism up so I figured this chili will sweat the fat away!!
Comes together quick, lots of varieties available! Serve with salsa or guac for dipping.
This is an extremely low-fat, low-cal lunch. I like to eat it with whole-wheat crackers and reduced-fat cheese to make a delicious, healthy, balanced meal.

Adapted from a Sandi Richard recipe, these baked-not-fried vegan curry spring rolls are just as crispy as the deep-fried appetizers, made with phyllo pastry and just a touch of oil spray. Delicious with plum sauce or sweet-n-sour sauce.
I was trying to come up with something healthy and not quite the typical "lettuce salad" for summer. I love fruits and veggies and try to sneak them in on my family when i can.

Makes 4 1 cup servings or 8 half cup servings. Very yummy, a little on the high side for carbs, but also high protein for a snack or dessert.
Just made this one up for dinner tonight. Turned out great and was a very large serving -- if you're not REALLY hungry I suggest making this into 4 servings. I served it with a toasted multi grain english muffin drizzled with olive oil & sprinkled with garlic powder. And unsweetened applesauce with cinnamon. YUM!
