I saw this in a grocery store deli and had to try it. I have made it with chicken breast also. I usally slice them in half. This recipe requires thin cuts of meat to be able to roll it up. I usally tenderize the meat before I start. The silicone rubber bands I bought at a kitchen store. They are reuseable and are good for 600 degrees.
This recipe is delicious. The flavor combination was fantastic! Original recipe is from Better Homes and Garden's "Eat Well, Lose Weight" cookbook. Made a few changes because what I had on hand. You would not know it was "low calorie" or full of so much potassium!

Make gravy out of the remaining liquid after the rest is done by adding 1 Tbsp cornstarch and 1 cup of water to the liquid after it's been transferred to a saucepan.
