My friend brought delicious zucchini bread to a potluck and I asked for the recipe. I tweaked the recipe a bit, making it a TINY bit healthier by using half regular flour, half whole wheat (both unenriched and unbleached) and by replacing the vegetable oil with applesauce. It still tastes PHENOMENAL! This makes 2 8x4 loaves. Cut it in half and you get 1!

Surprisingly moist and delicious use of that bag of apples you have laying around every Fall! I haven't tried using all applesauce instead of the oil, but that could work though bake time/temp may need adjusting.
This cake begs to have fat free caramel drizzled over top, or whipped cream, or anything really. The original recipes calls for a cooked butter/sugar/cream mixtured spooned over top, but it's frighteningly calorie-laden.
These are in no way healthy, but are a fun thing to make for/with kids for Easter.
Healthy? Only in moderation. There are a wonderful occasional treat with my morning coffee.
