Rich and chocolately without the trans fat from non-dairy creamer! I added the vanilla pudding mix just to see how it would be and was pleasantly surprised with the results (the Great Value instant vanilla pudding also has no trans fat) It seems to be the "secret" ingredient that gives this mix it's richness!

I use a mixture of brown rice syrup and honey to sweeten these muffins, but honey alone will produce a slightly sweeter version, using all brown rice sryup will make it less sweet.
