i tweaked a recipe from the "eat clean" book by tasca reno, i changed the flour...and used lighter bake oil replacement for half the fat...these are chewy and light when you want a healthy sweet cookie.
(if you dont have sunsweet lighter bake you can use applesauce)
I absolutely love this salad! You make it the day before you plan to serve it. It makes a LOT so the calories really don't turn out to be too high considering the ingredients! Can be used year-round but we love it in the spring/summer. This recipe uses light ingredients and you cannot tell a difference. If you want to use full-fat it will not hurt, but will change the nutrition stats!
This is a quick chicken salad great for sandwiches or on top of lettuce.
Initially, this recipe may seem like allot of steps but it’s really easy and worth any trouble. I make little 3” sandwich, using a good quality dinner roll or a larger sandwich roll for a meal. I have gotten rave reviews and requests for a return engagement when I have made these for parties. Yippy!

Made more than one at a time- they freeze well and are good to have for the lunch box.. I use other types of fish like tuna and shrimps.. I also exchanged peas for mixed frozen vegetables..
I serve this with melba toast or as a "Lobster" Roll inside of a light hotdog bun. Yummy!!!
