Corn, Cannelloni Beans, black beans and red/orange peppers combined with lime juice and other ingredients to make a fantastic side dish. I'll eat this as a side with grilled chicken or add it to fish tacos.
A wonderful recipe. It gets better the longer it sits. I use a combination of red, green and yellow peppers, about 1/3 of each and the salad just pops with color. If you only use one color, I'd go with red.

I don't like mayonnaise, so this is how I make my tuna salad. :) It's sweet, crunchy, chock full'o'protein, and delicious!
I'd recommend reducing the Bacon Pieces to about 1/4 of a cup, the same with the salad dressing. This is after I saw the calculation.
I'm replacing the bacon pieces and with 3 boiled eggs. It cuts down the salt considerably.
I used Trader Joe's Harvest Grains Blend (couscous, quinoa, lentils). Delicious by itself or as a picnic salad.
