This recipe is one that my family has been making for years. I'm not sure where it originated. It seems like my grandma saw it in a newspaper and adapted it for my picky eater brother.
I make this sometimes when I don't really know what to do with some chicken. It's easy and always turns out tasty.
A three-minute dip into a pungent cilantro-lime marinade is all that's needed to deliver big flavor to chicken breasts. Serve with saffron rice.
My favorite dish at a local Mexican restaurant is their Chicken Enchiladas with Creamy Green Chile Sauce. I had to try and find a way to lower the fat and sodium so I could enjoy these without the guilt! I tweaked that recipe a bit to lower the sodium and fat, and came up with a winner! My husband and teen daughter gobble these up!
This is my go-to recipe that I make just about every time I have leftover chicken. I love the fact that it is loaded with toppings and I can eat the whole thing! And it satisfies either a pizza craving or a buffalo wing craving.
A Weight Watcher's style recipe that I've tweaked a bit. The marinade/salsa is soooo good - that I've been known to double the recipe and use with other meals.
Serve this with 1/2 cup of ff cottage cheese and 1 cup of grape tomatoes and you have a great nutritious meal!
This can be used for so many things. I have cut it up and used it to make a buffalo chicken pizza, put it on a salad or eaten it just as is. If you like buffalo wings, this will satisfy you.
I make this relatively low-cal wrap for lunch almost every day for work. Enjoy!
Serve with lettuce and tomatoes. These burritos freeze well on bakin sheets or in baking dishes. Yield: 8-8ounces
This recipe is good when you have a lot of things to do and DON'T want to do them.;) So play in the kitchen and don't feel guilty!
