A super tasty vegan alternative to chicken, egg or tuna salad. There are endless combinations to this salad. I like to serve it in pitas or tortillas with spinach and peppers, but you can alter this recipe to suit your needs. I used vegenaise, but you can use any other suitable mayo substitute such as nayonaise or even a non-vegan mayo.
Cut back on the bread and use tomato slices instead! Great for brunch and another way to sneak in veggies.

I have always liked vegetarian "burgers" as an alternative to their high fat, high sodium meat counterparts. When my co-workers and I decided to go to Chili's for lunch, I assumed that the "Guiltess Black Bean Burger" would be just that...or at least a healthy alternative. It sounded delicious, but when I looked up the nutritional content before we left the office, I was shocked to see that one burger contained 1790 mg of sodium...More than I would like to consume for an entire day!! Since I'm watching sodium content, this was clearly not a good choice and I ordered something else. I figured I could make a much more heart healthy recipe and add some avocado, one of my favorites! This is a low-cal take on the Sloppy Joe, using turkey and vegetables. Turkey provides the low-cal protein and lots of veggies make this healthy.

Got this from pg 256 of Vegan Living (complete idiot's guide to) book. But, like any good salad you can make this one your own by tweeking the recipe. All appropriate credit to them but I wanted to add it here for anyone else eating vegan. I hope that's ok. Great for picnics or other occassions where you might normally have egg salad. A refreshing and satisfying cold salad, perfect for stuffing into whole wheat pita pockets or topped on rye crackers. This is a great salad to make ahead, as the longer it sits in the fridge, the better it tastes!
looks like a muffin, tastes like a dream. Great for lunch, but fancy enough to serve for brunch with friends! Really - these are yummy, and I don't even love tuna fish :)

This reminds me of tuna salad because of the mayo and celery. It's a good sandwich filling for vegetarians or those trying to get more beans into their diet. To make it vegan, just use Veganaise for the mayo.
