I usually make this colorful side dish with some baked fish but you can easily cook up some diced chicken and mix it all together for a one-dish meal. I also use Italian seasoning instead of just oregano but I couldn't find it on the ingredient list. Super quick to put together. I also choose to cut my zucchini and wedges instead of slices I think it cooked better in the oven. Just cut your zucchini lengthwise and then into strips and then slice into wedges.
