You can have your cake and eat it too. This is a yummy loaded potato dish and the only "diet" food is the butter. At just over 200 calories it is a wonderful comfort food and goes excellent with my 4 ounce filet mignon with no bacon.
My mom and I love these, so I make them once in a while for a treat. I usually only make half a recipe, though because they tend to dry out after a couple of days.

Thicken the yogurt by draining the whey from it ( about 5+ hours) through a coffee filter.
Grate cucumber and sprinkle with salt. Let the cucumber rest for 30 min. in a sieve over a sink or bowl to drain moisture from it. Pat dry with paper towels.
Mix the onion, minced garlic, dill, cucumber, salt, pepper & lemon juice into the yogurt.
Great as a dip or as a sandwich spread.

These are delicious. Even folks that don't like sweet potatoes love these. They freeze very well (only need to heat about a minute in microwave).
