These are not your standard muffin - the lentils give a gooey interior, and the colour ends up looking like a burnt purple. They come out lumpy and bumpy, but keep an open mind until you taste them!

I like to serve them with an "icing" of 10g ricotta cheese mixed with a bit of vanilla extract.

Substitute applesauce for oil. May use sugar substitute instead of brown sugar will save 15 calories per muffin. Use of one less banana will save an additional 7 - 10 calories per muffin. Instead of 87 calories per muffin this alteration to recipe would lower each muffin to approximately to 62 calories.
