I cogitated on this recipe for about a week.. I love creamy soups but have avoided them religiously for nearly a year... and I WANTED clam chowder... so I figured the best defense was to make up my own recipe... it was an instant hit!
My sister in law can't eat foods with dairy in them and came up with this delicious low cal creamy soup
This requires some minor prep in a saute pan before you throw everything in the crock pot, but I think it's worth the effort. It's also a rather salty dish, so I don't eat this very often, but it's good occasionally, and it would have a lot less sodium if you use a low sodium chicken broth and/or low sodium sausage if you can find it. Gumbo is one of those things that most people just DO and don't really follow a recipe for, so I did my best here, but don't be afraid to make alterations. This recipe is also great with shrimp. Serve over brown rice with some corn bread or a fresh salad, whatever your calorie allotment allows you!
A delicious and light addition to any fall meal. Can adjust for veggies available at time. Also can adjust spices per your liking. Works best by using a Dutch oven.
