Based on a Bon Appetit recipe from January 2004. Don't let the amount of garlic scare you - the low, slow cooking mellows it to a delicious, buttery flavor. Low fat and low sodium, so easy and so flavorful. Serve with sauteed spinach or asparagus and mashed red potatoes.
This recipe is for 5 arepas. This arepas can be filled with cheese slices, ham slices, scrambled eggs,meat (shredded), tuna etc. Ech arepa has only 110 calories, doesn't have any fat calories other than the corn oil that you need to greased the griddle where you are going to cook them. If you choose to fry them instead of cooking on the griddle, then Arepas will be a fatty meal.
Don't forget that to the calories of the Arepa , you will need to add the calories of the filling you choose to accompany with.
If you choose Tuna, you will find that is a really light meal!!
Arepas are delicious!! Can be eaten for breakfast or for dinner.
I took the brown rice meatloaf recipe, and redid it with olives & capers & cilantro for a Spanish flavor. :) Reminds me of my grandma's cooking.

This is a tasty and complex chicken chili bean soup. I will not call it chili because it really isn't a chili, but I make it VERY spicy and the flavor and texture is similar to chili. This is the first time I've made it, so we shall see how filling it is.
