This isn't my recipe but rather comes from blogger NYC Pink (nycpink.blogspot.com) with one small modification (less oil / more applesauce). When I make these, I don't measure out the spices but rather use 2 Tsp. pumpkin pie spice. Please visit the blog. She's pretty darn cool.
This is a neat, vitamin and vegetable packed recipe that is a little caloric but delish and filling. We ate it plopped over two pieces of toast and it was delightful. It was just a plus that it was actually vegan!
