Betty Crocker's Classic Suddenly Pasta Salad with a few extras. You can make this with Kraft FREE Zesty Italian to save on fat & calories. (I just didn't have any on hand at the time of the recipe).
This is fabulous. From the kitchen of Clean Eating Magazine. Red lentils work the best but you could substitute green lentils. You can also add in other ingredients to suite your taste. It's got just the right amount of spice to it.
A Bean Salad you can use to top Brown Rice or Quinoa. Don't forget to add these to your tracking whether you use quinoa or rice. This recipe is packed with Protein/Fiber. One serving size is half a cup. You should end up with 4 cups a batch (hence 8 servings). Of course you can dramatically reduce the sodium if you use bagged beans and cook them yourself, but this is a time-saving recipe.

In this rev. we used the Almond Meal Cracker recipe for the crust. It's higher in protein but more satisfying than the cauliflower crust.
This a family favorite, cheddar cheese & mayo can be replaced with low fat for healthier version.
The combination of fresh and canned fruit, makes this fruit salad economical and easy!
