I totally made this up! It's loosely based on a traditional, Jewish noodle kugel, but I wanted something that was also savory and had a lot of mushrooms and onions that I wanted to use. My husband said he never tasted anything like it before, but he really liked it, as did I. You could dramatically lower the calories by using fat free ricotta and fat free cream cheese, and you could spray the pan instead of the oil. I think that would probably cut your cals in half, but I had to calculate it for the way I made it.

This is a detailed guide on making real Belgian pancakes. In Belgium we make these a lot at many occasions such as childrens birthday parties, family gatherings,carnivale afternoon treats and on the 2nd of November on All Souls' Day but hardly ever for breakfast.
We also have a slightly different taste in toppings, ranging from jams over white granulated sugar, medium brow sugar, the very dark sugar, honey, fruits or even Nutella chocolate paste.
I often make these with soy milk and they taste also very good. So the recipe can be easily adapted for people that are lactose intolerant.
This batter will make about 10 pancakes. I eat about three and that's enough. The nutritional value provided here is for 1 pancake.

This dish can easily be modified for a different profile every time. Asian one night, Italian another, or just salt and pepper for a clean taste. I have it as my main course often!
I add a few whole cherry tomatoes and a quartered, deveined, deseeded jalapeno for spice with plenty of garlic to just mix it up. Lightly sprinkled with Parmesan cheese for when I need my cheese fix. Picture includes all of these extras.
Store bought dressing is not very good. When we eat out hubby always gets Italian vinaigrette dressing. I decided to make it at home and it tastes awesome!
This is a boiling dough I use for Perogies, pot stickers, noodles, or dumplings. It's awesomeness. Fill with anything. Even desserts!
