This is a great fresh salad for a summer's day or any day when you need something refreshing for lunch or dinner.
For those that love a good ol plate of spagehtti but don't love the plate of calories try this switch a roo.
I like to experiment with veggie/fruit smoothies. This one has become one of my regular morning drinks.
Eggplant, zucchini, red, onion, yellow and green peppers with olive oil and garlic cloves. All roasted for 45 minutes at 350 degrees.
Great for a pot luck or picnic! The honey and mint add an interesting "spark".

Delicious chunks of paneer are marinated in a spicy yogurt mixture and then fried, roasted or broiled. I used them in a whole wheat pita stuffed with spinach and tomatoes. Can serve with a tomato based gravy, on a bed of rice, with some stir-fried vegetables, or eat as is for a tasty snack.
So I made this one morning for breakfast and I loved it so much that I had to post it as a recipe for others to try. It is relatively healthy but is not so low in calories... but it's not super high either.

This is my take on the traditional chili cheese etoufee with crawfish that Yats serves. I've left out the meat, chicken stock and Worcestershire sauce to make it vegetarian. Typically this is served over rice.
