Cream Cheese Icing Recipes

This is a modified version of the popular Pumpkin Muffin recipe here on Spark People. I didn't like the spice cake. I use Carrot cake instead. Also, it was too dry, so I add applesauce and water. We also like cream cheese icing and use that on our muffins. We use a half container for a batch of 18 muffins.

This icing is delicious, though a tad on the runny side, you won't be able to do decorative icing unless you thicken it up. Best bet, try this mix with more sugar. But for a healthier gooey treat, this is the way to go.

Healthy version of a pumpkin cupcake. Made with wheat flour and apple butter. These are very dense cupcakes.

Perfect for carrot cupcakes!

Made these for a first birthday party- for my puppy. I decided to taste one, since there wasn't anything in them that I wouldn't eat otherwise. I was very pleasantly surprised that they tasted very good to me! They're not cloyingly sweet, but neither are they bland. I crunched the numbers, and decided that nutritionally they seemed reasonable in moderation. So, they are puppy and kitty safe as well for treats, b-days, etc.

Don't peel the apples. Just core and chop.

This super-easy recipe is great for kids because it is hard to screw up. On different occasions I have used up to 50% more apples than it calls for and left it in the oven 15-20 minutes too long and it comes out fine. Just supervise kids when chopping apples.

A perfect way for diabetics to have their cake and eat it too! So easy, your kids can help.

This is cream cheese icing is RNY friendly.
