Quick and Easy Black Beans and Rice
Serves 12 as a side dish or 4-6 for main course. Nutrition is for side dish, assume 2-2-5 servings for main course.
This is the dish as I made it. I would probably experiment a bit to see if you could bring the oil down somewhat. Also, to make lower fat you could substitute a light sausage, although the andouille has such a great flavor I felt it was woth the calories.
