This is a great hot weather meal. At 85 calories, you can have 2 servings at one time.I serve it with one ounce of tortilla chips (140 calories).
I read this recipe in Family Circle Magazine and have tweeked it a bit. It is a fabulous way to get in daily veggie servings.

Based on a Weight Watcher recipe you can adjust the amount of wine and vinegar. Also if you choose can add any number of raw veggies like cabbage and carrots
