This tastes so good, you'll never guess that it's good for you. Serve with fresh fruit and toast on the side for a delicious brunch. You can use different veggies and meats and even top with different cheeses for variety. (Note: To make the calories and fat even lower, use egg substitute instead of whole eggs.)

This is a base recipe for ricotta cheese pancakes, a healthier alternative to traditional ones. Add fruit, spices, and extracts to this that suit your tastes. Some of my favorite combinations:
*strawberries and an extra dollop of ricotta
*bananas and a tsp. of peanut or almond butter
*agave syrup
*blueberry jam
*cinnamon and sucanat or evaporated palm sugar
My version of Coach Dean's oatmeal. I eat a smaller portion & male with milk. If sweetening need, I add splenda.
Super simple and delicious variation of regular hum-drum oatmeal.
You can top with chopped walnuts if you want for a little extra texture.
1 tablespoon butter
1/4 cup chopped onion
4 eggs, beaten
1/4 cup Salsa
2 tablespoons crumbled feta cheese
