Something I whipped up when I was craving a dessert and needed carbs, and had some fresh lemon lying around. Quick, easy, yummy, and healthy.
A thin layer of brownie, baked in cupcake liners, topped with a mix of lite cool whip and strawberry yogurt and garnished with diced strawberries and shaved chocolate.
This is a light dessert that is really easy to make. Perfect for the summer!!! You can also substitute any fruit you want to your liking. Even try it with a different pudding flavor!

These remind me more of big square chocolate chip cookies, but they are still very tasty!

Single serving pear or apple crisp may be microwaved, baked in the oven, toaster oven or a combination of both. Satisfies part of your daily fruit servings and your sweet tooth! Any fresh fruit would work nicely. I might try fresh peaches next time. Sugar substitutions could probably be used with good results.
Not necessarily "healthy," but a better alternative than the traditional mug brownie. This recipe cuts the calories in half. You can omit the chocolate chips to cut another 70+ calories.

An easy to do recipe with delicious results. Half a cup of olives is an optional addition to this dish. It goes well with rice.

My husband loves the coconut filling in candy bars like Mounds and Almond Joy. I had made some candies like that at Christmas and got to thinking that maybe I could come up with a low carb version that I could have. When I handed the first one to my husband, his response was "These taste like cheating!"
This is so close to the wonderful Amish candy that is so expensive. It will be more calories or less depending on how big you want them. I cut them for 30 servings. But oooohhh so good. Everyone loves it.
A fat-free, moist and delicious pineapple cake that everyone will love.
If taking to a party or event, I usually add a cream cheese butter frosting which is added while the cake is still warn.
