Fast, filling and super easy to do. These burritos make a supper spring to life in a matter of minutes. Pair this with Spanish rice, beans, lettuce, chopped tomatoes, salsa, light sour cream and (if you can spare the calories) some homemade guacamole and you have a meal that even a Los Dos Amigos would be proud of! (I use smaller tortillas than what is in this recipe to cut down on calories. It doesn't ruin the taste and it is still filling!)
This recipe has been adapted from one found on Gina's Weight Watcher's Recipes site. (http://www.skinnytaste.com/2008/03/split-
peas-soup-with-ham-2-points.html) I added more carrots, plus celery and swapped out the ham hock for a third pound of crisped bacon. My changes added 1/2 point to her recipe.
OK, so there are lots and lots of Turkey burger recipes out there and I have tried most of them so I can say with all authority that this is the "bestest"! Serve as traditional burger or top with "Cottage Dill Sauce by Rebbie" for a more formal meal.
