I took a basic pancake recipe and made it a little bit healthier by adding whole wheat flour and substituting the butter with canola oil.
This recipie is fast and easy to make. You can make it as an omelet or a scramble.
You can do this on the stovetop or in a slowcooker. I prefer the slowcooker, as I don't have to pay attention to it!
Preheat oven to 375 Mix fruit Mix dry Mix wet. Layer fruit then oatmeal quinoa then repeat. Slowly pour in wet from a corner of pan. Top with coconut flakes. Bake 60 mins remove from oven and let set 30 minutes. Divide into 9 pieces.
This was originally an Applesauce muffin recipe that I tweaked to make a healthy breakfast muffin.
These are so good and they stay with you for a long while.

the only pancake my sons will eat. I hate cottage cheese but you don;t even know it's there---in the batter. You MUST use a non-stick pan and MEDIUM HEAT
This is like an oatmeal bar that you mix the night before, form and leave in the fridge over night...its super yummy and allows you to be creative!
A 1/2 cup serving of this homemade granola will take you a long way. You can ad any dried fruit you like just make the adjustment on the nutritional info
