I have this for breakfast every AM. I use Brookford Farm's pasture fed, fresh (unprocessed) milk.
A delicious and easy banana muffin recipe. Low sugar and a good source of protein.
This is filling and delicious with great fiber and antioxidants.
Banana pancakes after Jack Johnson song but made Gluten Free, Dairy Free, and Vegan and yet it still is delicious!

Spray 9 x 13 inch glass dish with butter flavored cooking spray. Add potatoes and cheese to prepared pan. Set aside.
In a bowl whisk together eggs, milk, Mrs. Dash, salt, pepper and garlic. Pour over the potatoes. May cover and refrigerate overnight before baking.
Bake for 45 to 55 minutes 400 degree oven or until eggs are set in ceenter. Let cool on a wire rack for 5 minutes before serving.
May also add 1 1/2 c of chopped ham, turkey, or shrimp
For that day you need to do something quick for that work potluck or to take to a family event. Bonus when it comes to cinnamon rolls they are relatively small, but still give you a little treat.
These German pancakes come from my great great grandmother in Germany. It doesn't get any better than this! If you are using an iron skillet for this, then use Crisco to grease the skillet in between each pancake. If you have a German friend that can show you how to make these, then it's easier to learn when you see it done.
Yield: 15-20 pancakes, double or triple the recipe as necessary!

I add 2 scoops of raw vegetarian protein powder to mine to up the protein content, but that's optional and not included in the nutrition info.
My great-grandmother's recipe. She used home-made crust but in this case it was made with premade, refrigerated Pillsbury crusts to save time. I do have the recipe for the fresh crust if someone wants it, but pretty much any flaky pie crust recipe will do.
This is an alteration to a great waffle recipe on SP, but with much less fat! Made with skim milk, they are light and fluffy on the inside.
Also great as a dessert topped with fresh sweet berries or peaches etc. and whipped cream.
