This recipe was taken & slightly modified from "Bakin' Without Eggs" by Rosemarie Emro I use since I have a child with an egg allergy but they're extremely good and would be great for a vegan diet. Her recipe called for 1/2 c. chopped nuts, but I don't like them so my calorie counter does not include them.
Classic recipe with an italian twist. For variations, you can poach the egg or use different cheeses for the topping (italian cheese blend, romano, or parmigiano reggiano are all good choices)! You can even add some bacon crumbles, sliced smoked turkey sausage, or prosciutto for more protein.
Fruit or whole wheat toast are great side items to this dish.

This is a tried and true recipe from "Everyday Dutch Oven".
Use a 12 inch dutch oven lined with parchment paper. It takes about 30 minutes to bake with 10 coals in a ring around the bottom and about 20 on top. Rotate the oven halfway through and check to make sure the cake isn't browning too quickly and move a few coals from the center of the lid to the outside during the last 5 minutes of cooking time.
