Adapted from HungryGirl.com. Hungry Girl is a genius when it comes to recipe conversions! To make it specila use a short, sweet Persian cucumber. Add a dash of lemon pepper seasoning, too!
With these pancakes you can make up the dry mix (I ususally double it) and keep it in the fridge and make it up only when needed. (which will be often as good as they are)
I created this on labor day because I wanted to have some homemade banana puddin' just like the rest of the family. Banana Puddin' is a southern tradition. And the reduced fat nilla wafers get nice and soft, not mushy like with the regualr nilla wafers, because the reduced fat ones are very crisp.

I make these ahead to pop in the toaster in the morning for the kids before school ..or when I need a quick snack, they freeze really well!
Light, Healthy, Low Fat, Tasty Soup from The Bahamas!! I have given you the Chicken version, but you can substitute it for Turkey wings or Pork Ribs (both cut in cubes). Great on a Saturday or Sunday Brunch!
