A healthy dip that is delicious with fresh veggies!! Very fast and simple to make. Makes 23 servings of 2 tablespoons each.

Red potatoes are great for this recipe, but I've used russet as well. If you choose red potatoes, the skins may be left on for extra fiber. Russets should be peeled.
This is a really easy dessert to make and take to a picnic that is low in calories unlike so many desserts. It is light and fluffy and can be made with almost any fruit and the corresponding yogurt that you desire.
This recipe was given to me by a friend. To make it healthier, I would substitute the sugar with Splenda. The butter could be substituted with a healthier substitute. I would also cut the portion size down from one dumpling to 1/2 of a dumpling.
