Vinegary and slightly sweet, super refreshing cold salad with cucumbers, onion and fresh dill
5 Tbl Regular Mayonnaise 6 Medium Hardboiled Eggs chopped 1 5-oz can of Kroger waterpacked chunk light tuna - flaked with fork Mix all 3 ingredients together Makes 6 servings
This is a delicious salad that my Mother-in-law makes. It is not recommended for staying within calories, but a revised and more healthy version is in the works!
This is a tasty side dish for a group and takes only about 30 min to prepare. It is best to make ahead so the seasoning from the dressing soaks into the vegetables - Lighten this up using Lite dressing.
I devised these to aid--ahem--regularity on the Dukan Diet, hence ingredients and measurements are based on the Dukan requirements (oat bran is 2 Tbsp, the daily dose for Cruise phase). But they would be useful for anyone who wants to prevent constipation, and they are actually quite tasty even for non-sufferers.
Recipe is based on principles of Irish Soda Bread so once liquid is added you have to work quickly.
