Bake whole skinless chicken breasts until internal temperature reaches 180 degrees. Cool then chop coarsely. Finely chop celery. Slice grapes in half. Toast walnuts for about 6 minutes at 375 degrees, Cool the nuts. Combine all ingredients with the mayo and mustard. Add salt to taste. Yields 4 cups, or 8 1/2 cup servings

White beans, shredded chicken, green chile, sour cream and cheese. Need I say more? These have just the right amount of kick to them and hit the spot if you're craving Mexican food. They are high in fiber and so filling (one enchilada is a perfect serving size). The easiest way for me to make shredded chicken is in my crock pot. I let it cook all day while I'm at work, then I come home and shred it and freeze the broth for other recipes. Click here for the recipe. I whipped this together tonight, with just what I had on hand. My family really liked it and convinced me to make it my first post! As I do with all recipes, you can use this one as a guide, and make whatever changes you think will improve it. The fat content is actually lower than calculated, as I drained the fat off the chicken and turkey.
I served this with a dollop of fat free sour cream, a T. of fat free shredded cheddar and some diced green onion (keep in mind these are not added to the calories but they add no fat!) but you can dress it any way you like. I hope you enjoy it!

This recipe make four full servings. Pair with steamed veggies to fill out the meal and add any herbs you may have on hand.
