This is a really quick and easy warm or cool salad. Keeps well in the fridge for a day or two. Good for picnics and potlucks. Vegetables, seeds and dried fruit can be adapted to what you have on hand. It's also quite nice to toss some baby spinach or rocket (arugula) through.

This is our standard potato salad. The ingredients will change depending on the season, sometimes leading to a more southwest take, sometime more Greek, other times more Italian or German.
I love this type of salad. I made it over to keep it lower calorie so it could be paired with a well-balanced dinner. I reduced the amount of bacon and significantly reduced the bacon fat from the dressing. I also added some fresh diced tomato that wasn't in the original recipe.

This is a substitute recipe for Sun Dried Tomato Vinaigrette dressing. I used 1 tsp honey in place of the sugar.
To maintain a vegan status I do not include feta cheese, but for those who prefer, add about 1 tbs to your serving.
