This recipe is very nurturing for the fall or winter. Roasting the veggies together like this brings out the sweetness, so everyone loves it. Tons of vitamin C and curbs sugar cravings in a healthy way, too!
Makes 1 qt of delicious, sweet and sour pickles with just enough ginger tang to make them interesting! Radishes and carrots get tinted with steamed baby beets in an Asian-inspired brine. I recommend you wait at least 2 weeks before enjoying them, but once you open the jar the possibilities are endless!
These are not sweet biscuits, but they are delicious and a perfect pairing with a chili or even an Asian inspired salad. No added fat in these tall puffs of goodness, either... it's all in the pumpkin and baking powder!
Amaranth is full of high quality protein and is high in fiber. It can be used in applications similar to polenta as once cooled it will hold together. Makes about 1 cup cooked.
I really love garlic and after spending 3 years in Spain both garlic and olive oil became a natural part of my pantry. it was no surprise that the first time I came upon a cascading pile of beatiful green, exotic curling garlic scapes (green garlic) at the farmers’ market, I couldn't resist. Even though I really didn't have any idea what do with them. Actually they are great anywhere you would use garlic or green garlic. This is fab use for them while the markets are full of many hued, nutrient filled spring potatoes.
This is an easy combo of frozen corn, black beans, wheat berries and salsa. The wheat berries add a delicious chewy texture and whole train health benefits.
This tastes like Southern Salsa-it's particularly refreshing in summer, but is a hit any time it's served. We all REQUEST that Lorra bring this at every gathering. (Lorra's ready to make other stuff!!! ha)
Low in fat and high in protein and fiber, this spin on classic mujadara is a great side dish. Throw it in a tupperware cold and it makes an equally delish (and filling) brown bag lunch! I love mujadara (a Middle Eastern dish of lentils, rice and carmelized onions), but I often overcook my rice leaving the dish a mushy mess. So I substituted one of my favorites - nutty, chewy barley - and discovered that I (and my picky toddler) prefer the newfound texture over that of the gritty/mushy aforementioned dish. This has become one of my staple vegetarian go-to meals and you'll always find a tupperware full of it in my fridge =)
I adapted an oven cheesy potatoes and ham recipe to make in the crockpot.
Adapted from Fit-It and Forget-It Cookbook. Makes very large, tasty meatballs
Very simple way to prepare beets. My garden is bursting with sage right now so I added some fresh sage in the last part of roasting and it paired nicely.
This is a great chickpea recipe. Very easy to make for an appitizer or just a side dish or snack. Very little ingredients and little time.
