Warm up your weekend with homemade soup! Here's one you don't have to watch over.
One of our local diners makes a soup similar to this - a creamy potato soup with ground beef in it. It's delicious, but more fat than I'm able to eat. I made a version of it that was more friendly to my gastroparesis diet! Why is it called Witch's Brew? Cause I asked my husband what to name it, and that's what he came up with! (I'm a Witch, and I "brewed" it!)
Fast, Easy, Semi-Homemade, Guilt free, and delicious. I always bring this to parties, and people go crazy over it. Nobody will notice it is figure friendly.
This is based on the Basic Green Soup from NPR's "The Splendid Table" by Anna Thomas. Where she uses yellow onion and chard, I substitute Vidalia onion and southern greens like turnips or collards. She garnishes with a swirl of olive oil while I use a dollop of fat-free Greek yogurt mixed with garlic powder.
Healthy full of veggies, fiber and protien. It tastes like a cream soup without the cream.
This is a very good chili recipe. If you have ground beef or turkey, or some cooked chicken, you can add these to the chili, too. About 1/2 pound of ground meat or about 1 cup of cooked meat will be plenty. This recipe doesn't need meat to taste good, though--it is excellent just the way it is!
This chowder just screams summer fresh flavor. The soup is so sweet since you are not cooking the corn. Even adding a pinch of cayenne doesn't diminish the sweetness, it just gives it a little kick.
The almonds thicken the soup and make it extremely filling.
I have been makinig French Onion Soup for years, but because I have recently started cooking for family members with restrictive diets I have gone a step further, and have come up with what I believe is a pretty good fat free version ;) I am new to posting recipes (as of 3 hours ago, lol), and could not get it exact on Sparks calculations, but I can assure you, this is fat free. This soup is chock full of onions, as I think onion soup should be, so you don't miss all the "fattening stuff"!
