I love cauliflower soup but I usually add some potatoes and carrots. While I was doing Phase 1 of the South Beach diet, I tried this recipe out and loved it. It would also be good with a little bit of broccoli but I didn't have any on hand.

This salad is a delightful dish to have on a hot, summer day. Goes great with a wheat roll, and grilled fish.

This recipe comes from Taste of Home magazine. Very good on a fall day, especially with a couple dashes hot sauce or a can of chiles added in.
This is from a weight watchers meeting back in 1996. I make this a lot for lunches with friends. Sometimes I'll substitute shrimp for the chicken. Or I'll add more veggies, such as red bell peppers or snow pea pods (add pea pods just before serving. They lose flavor and color if left long in marinade).
This is a wonderful soup, great on cold days, or when you are feeling under the weather.

The red and yellow potatoes in this soup make the soup more filling, more flavorful and higher in potassium. It makes a lot because I freeze it in meal-size containers to take to work or school.
So fresh, light, and easy to make! Great as a side salad, topping for greens/meat/rice, wrap filling, healthy dip for chips--this stuff is incredibly flavorful and versatile! I adapted this from another recipe I found on here to change and add a few things.
This soup freezes well! Just cool completely and fill a freezer bag halfway. Lay flat in freezer so it won't take up too much room. To defrost, just run warm water over bag, and then warm up on stove
