This is the basic recipe. I often replace 1/2 cup of flour with a combination of natural bran, wheat germ, and flax meal. Delicious with marmalade. I also use these to make individual strawberry shortcakes. I also sometimes reduce the milk to make a stiffer dough, roll it out and make cinnamon rolls. You can do almost anything with this recipe.
These are a fast and healthy version of my favorite breakfast item. I cook a batch of these on Sunday and then put them in baggies to eat on my way to work. Makes a good mid morning snack too.

Delicious gluten and dairy free pancakes. Use as flatbread. GEMS flour was created by Wendy Turnbull in her book gems of gluten free baking. You may substitute 1/4 cup brown rice flour and 1/4 cup amaranth flour for the GEMS flour mix.
Light and flavourful. Great for you want a decadent treat without going overboard.
