A low fat version of my mom's strawberry pretzel squares. Similar to a strawberry cheesecake but very light. My mom used to make this when I was a kid but with full fat ingredients. It's great in the summer time for cookouts or brunches. The calories are higher than I expected. I think because I made the crust w/ sugar. I wasn't sure how it would hold up with Splenda.
My soon to be sister in law love mac and cheese. We wanted a lower calorie version and this is what we cooked up.

You can get creative and try different fruit toppings of your own (add pinapple or cantalope to the salsa, serve with warm cherry topping, or rasberries and chocolate sauce instead)

The ingredients in this recipe have plenty of sodium, so you shouldn't have to add salt. I suggest waiting until it is all cooked and taste testing it first. All of the spices can also be adjusted to your liking. I use twice as much cumin and chili powder. Recipe as it is a mild-medium spiciness, so if you like more spice, I suggest adding a few chopped jalapenos (seeds and all).
Serve with shredded cheddar cheese, a dollop of Daisy light sour cream, and Saltine crackers (unsalted tops). Can also be served as a topping or side for hamburgers, hot dogs, carne asada, or barbecue chicken.
The fat that comes from this meal is "good" healthy fat.

The same idea as my originals, only a little lighter! I factored in seasoned salt for seasonings, but use whatever you like as it has a minimal impact on your calories.
My husband is from the Netherlands and misses and loves his Shawarma. So I looked up the spices and made them into a Turkey burger one night and the love affair began. The calories include Turkey but you could use beef , Also we go low carb so no bun in the calories. We do like light mayo and that is in the count. You can use the spices to make Traditional shawarma also . I will try to post a recipe for that also. Hope you enjoy.
