Vegan pumpkin scones! Sweetened with stevia - good for diabetics and other low-sugar peeps! Nutritional information is for the basic recipe, but add 1/2c chocolate chips and 1/2c walnuts for some extra yumminess and they're only 177 calories! You can also make them with Wheat Flour instead of the White for extra fiber.
Wonderful fresh fruit dessert for hot summer days. Under 200 calories per serving.
I got this recipe from Nourshing Flourshing! They are fast easy and all good ingredients, can you believe only 3, yes 3 ingredients in these cookies? There really doughy and soft, so make sure you let them sit to harden a bit!
Mix all ingredients together well in a bowl.
Add Banana and/or Blueberries
Spread the mixture in a 9x9" pan, lightly sprayed with nonstick spray.
Bake for 60 minutes.

This recipe is not too sweet, made with whole wheat flour and rolled oats.
Fresh summer stone fruits and a high-fiber, whole-grain crust. I made up this recipe to get rid of some of the overabundance of fruit I got from my local farmer's market. Any combination of stone fruits (peaches, plums, necatrines, cherries) or berries would work wonderfully.
This is an easy and delicious cake that gets even moister the next day. The trick is not to over bake. Bake it in a bundt or tube pan for a cake presentation, or in 24 muffin tins for cupcakes.
I got this recipe from an Eat Up Slim Down book and reduced the sugar amount a bit and changed the 1% mlk to skim. I also added some walnuts. It makes about 45-46 cookies with my #50 scoop. W/out walnuts these are still really good and it take a little over 10 calories away per cookie! Either way they are awesome!
These won't be the best looking cookies, but could possibly be the best tasting at your next pot luck! Either way, they are sure to get many compliments =)

This recipe uses canned coconut milk just because it can be a staple in your pantry, but if you have the time, by all means make your own coconut or almond milk and substitute. (You would not need to add the water if you make your own as it will already be thin enough.)

after winging it with ingredients I had available to me and it turned out delish! The dark chocolate is VERY rich, you could go lighter on that ingredient to your taste and I'll advise the same with stevia. This recipe is on the light side for the sweetener as I find it a tad bitter if you add too much. I feel you could always add more later.
