This is a delicious crust-less pumpkin pie. This recipe was used while I belonged to Weight Watchers - I have found many variations of this "classic" Weight Watchers recipe. This dish is 2 WW points per serving.
I used double the pumpkin to Cool Whip ratio as many versions, making it more filling, higher fiber and lower sugar than usual. The Cool Whip Free adds plenty of sweetness, so when I make it at home, I do not add any other sweetener.
This is also a double batch compared to the original recipe. Doubling it makes it easy to combine pudding flavors, using two small boxes of pudding. My favorite combinations are cheesecake and vanilla, and cheesecake and butterscotch. If you want to use a single pudding flavor, use one large size box of pudding.
Used canned pumpkin, not canned pumpkin pie mix. Some groceries, even major chains, only carry the pumpkin pie mix. You can easily use canned sweet potatoes or other squashes. I have not tested this recipe with fresh cooked squash or sweet potatoes. For whipped topping and puddings, I have found using generic brands to result in a dessert with less flavor. Using standard vanilla will result in trace amounts of alcohol. To avoid this, use glycerin-based extract.
This dessert is also tasty in graham or other pie crust, or served with graham crackers.
I prefer to put it in the freezer to set. It is very good if you freeze it solid and thaw it just enough to stir it to a smooth consistency. You can also refrigerate it.
Pudding flavors tested and recommended:
Vanilla, Butterscotch, Cheesecake, White Chocolate, Banana Cream
This is a very good banana bread that you can add nuts or dried fruit of your choice to but they will move the calorie per serving up quick.

for dads (almond milk) subtract abt 3 cals
if adding chocolate center, add cals for that also!
This is a deliciously creamy pudding that is so rich that you don't need a large portion.
Adapted from Kristen's RAW Recipe, I only swapped out some of the Dates for prunes because I didn't have enough of the Dates to finish the recipe.
They still came out delicious and because of the Prunes this was less in calories.
Saw a commercial of Almond Joy and I thought I can make those Raw, so here they are. Yummmm taste just like them without the loads of sugar.
We shall see, I added Splenda instead of sugar and it is still high cal...gonna experiment.

I also think it holds together better, and taste better the second day. I like to leave it overnight in the fridge before cutting into it.
Okay, so this is a holiday standard in my family. I don't get it often, so keep that in mind when dishing out servings of it.

When making the zabaglione, make sure to cook the egg mixture in a glass bowl over water that is barely simmering. Glass conducts heat more evenly and gently than metal. If the heat is too high, the yolks around the edges of the bowl will start to scramble. Constant whisking is required. If necessary, you can use a single type of berry instead of mixed berries, but do not use frozen berries. A broilerproof pie plate or gratin dish can be used in place of the individual gratin dishes.
