Mince garlic (do not chop broccoli).
1. Coat large skillet with nonfat cooking spray and heat over high flame.
2. Saute onions and garlic 1 to 2 minutes, or until onions begin to soften.
3. Add beef and saute until beef begins to brown.
4. Add broccoli and reduce heat to medium. Continue to cook until broccoli begins to soften.
5. While broccoli and beef are cooking, whisk together flour, milk and worcestershire sauce in a small bowl.
6. Once broccoli is cooked, pour sauce mixture over beef and bring to a simmer.
7. Slowly, sprinkle cheese over beef mixture and mix well. Once cheese is melted, turn off heat and allow to sit for 2-3 minutes before serving.
*Can add rice or noodles or eat just as prepared*
I made some changes to a recipe from Campbells and greatly reduced calories, sodium, cholesterol and fat. This is a great, filling, easy and tasty dish on a cold day! ...and it uses only 4 ingredients!
This recipe is extremely flexible and great for those days where you need to clean out the crisper drawer. You can use any combination of vegetables.
This was adapted from several recipes I found here - with a few minor changes. This was SO easy to make and DELICIOUS. My version is a little spicy. It's surprisingly filling! I like to use the Rotel cilantro and lime variety when I can find it.

This is a good old fashioned stew recipie. the meat becomes tender and succulent, and you can't beat these light herby dumplings. Clean plates all round!

I have a very different variant with chicken which is good, too. This recipe is more directly related to one in a food & wine cookbook but has been heavily adapted. Originally I just used olive oil spray but as my family has increased our calorie intake, I've added modest fats back into our diet. This recipe works with olive oil spray.
This is a great meal to throw together in a pinch. Fits well into a low cal diet (if you stick to your portions) and its got tons of flavor.

An 8-inch ceramic baking dish with a lid may be used instead of the baking dish and foil. To double the recipe, use a 13 by 9-inch baking dish; the baking time need not be increased.
