I originally was going to make regular chicken and dumplings but I couldn't affrd all the cream soups and such, then i was making a two week batch of chili and couldn't fit all the ingredients into the pot so I added them to the crock pot! It is so yummy and hearty! I know my hubby is going to love it!
Very healthy and delicious vegetable lasagna, full of fiber and nutrients! Easy to customize; just add your favorite fresh produce to the mix.
I see so many delicious varities of this. You can even take your basil and sundried tomatoe and make a nice
Pesto sauce. I like to grill my chicken. And cut it in thin strips. And place my sundried tomatoe/feta cheese mixture on top with a drizzle of balsamic vinegrette. And eat is as an Appetizer or over a bed of baby greens. I am even thinking of eating this in
a whole wheat wrap or even a crossiant,but I have not tried it that way as of yet,but you cna always get creative with this.
These are always a hit with my family! Great served with brown rice, and an excellent way to get those veggies and that protein!

Delicious vegan soup
This is from Quick Fix Meals w/ Robin Miller on the Food Network. I entered ingredients so I could have nutritional information.
Hoping to make more marinade/sauce for the pork so I doubled up on some of the ingredients this time 'round...
Tasty, low calorie quesadillas! High in fiber, protein and taste.
*Add peppers, broccoli, or another vegetable to amp up the health value. You can "healthy sautee" most vegetables in with the Quorn tenders and water (see below).
*I use Kraft's Fat Free Shredded Mozzarella and Cheddar cheeses because they are the only fat free shredded cheeses at my grocery store.
