This recipe uses the directions and ingredients listed on the Patak's curry paste.
Not including rice, this is a coconut based sauce with yellow curry, I also add garlic chili sauce (tomato based), but didn't see it listed. Good with chicken as well, and/or substitute cauliflower for potatoes for an even healthier version.
This is a great recipe for those extra summer vegetables. I generally used more of everything and do a big pot that will carry us for two or three days. Don’t forget the cauliflower because this is what finishes this dish. Dried black or kidney beans also adds a nice touch.
Lots of protein and "slow carbs". Light and lemony after the taste of the curry.
