For all of us Italians new to the vegetarian world, and missing some of those classics that mom and grandma made your whole childhood :)
A great soup for the crock pot. Easy to make, tastes great. Make extra and freeze in individual portions for fast frozen dinners.
A delicious soup modeled after Olive Garden's Pasta E Fagioli soup, but with some healthier changes such as less meat and pasta and more mouthwatering veggies.
I saw Pat and Gina Neely make this on "Down Home With the Neelys" and the Romaine looked so good when Pat took it off the grill I decided I just had to try it! He made in on an indoor stove top grill plate and I think I'll try it that way too.
1. Place 4 small chicken breasts in a ziplock with italian dressing to marinate for 30 minutes. Then, grill until they are about 1/2 done.
2. Place in baking dish side by side, and stop with tomato/basil mixture. Then sprinkle cheese evenly over 4 breasts.
3. Bake at 300 for 15-20 minutes, until chicken is cooked through.
4. Enjoy!

this sauce is also called a vinegar pepper sauce . it goes great w/ chicken and or pork chops.
This has all the flavor of a great cheese lasagna with a MINIMUM of calories. You can certainly add some shredded mozzarella or other ingredients if you'd like that flavor, but not for 256 calories a serving! In my book this is a winner!
An variation on an authentic Italian Tomato Sauce
Takes a bit of prior preparation time
Vodka Sauce with Diced Tomatoes. Great if you need to stretch a single jar of Vodka Sauce & also want to reduce the calories of straight Vodka Sauce. Service with Spaghetti Squash or Whole Wheat Pasta.
This is a quick and easy pasta dish that my family loves. You can use sliced fresh zucchini if you prefer.
M\y children will eat this. I can hide a lot of vegetables in this dish and often serve it with baked salmon.
My Mom's recipe. She had to make it meaty for Dad, but light enough for her. I also use this for pizza sauce.
An excellent vegetarian lasagna, my family loves it. I make it in a 9" square pan and cut it into 9 generous servings. I like to use the no-boil lasagna noodles because they are shorter and fit my pan better, but you can use regular noodles and break them to the right shape. You may want to add extra sauce to help the noodles cook if you do that. You can use just zucchini or mix zucchini, yellow squash and add in some bell peppers for a more colorful lasagna.
