Prepare this fast, easy, delicious recipe in the crockpot.
Directions for stovetop or oven casserole are also given, as well as info on low sodium alterations and a delayed crockpot start.

It's even faster (10 mintes to prep) and easier (just dump all ingredients into crockpot) if you brown quantities of hamburger in advance (4 pounds fits nicely in my large skillet), then degrease and season it with beef soup base and dried onions. Freeze it in 1 to 1.5 # ready-to-use Zip Loc freezer bags; be sure to note the weight on each bag, for calculating nutrition.

Based on a recipe from a superb low carb cook, I've "Texanized" the original. Have it plain OR garnish with your choice of salsa, sour cream (or Greek yogurt), chopped pickled/fresh jalapeƱos, chopped tomatoes, sliced/chopped avocados. The almond flour is really optional, but included in the nutritional statistics. The ricotta cheese blends in so well, you won't know it's there -- but adds some wonderful protein to the stats.

This dish is high in omega 3's. Basa is a white fish I had never tried, but it was recommended to me by the butcher and I'm always interested in trying new fish since it is high in nutrients that my body needs. It is inspired by a recipe they had at the store, but their recipe was high in carbs as it included rice. Another mad scientist adventure in kitchen witchery. In the original dish the walnuts and parsley were mixed in with rice cooked in chicken stock.

This is an easy recipe that a cook of any level can put together. You can either buy all fresh vegetables and cut them yourself or buy them pre-packaged and just throw them in the pot. I love soup in the fall and this is a great starter soup to get your fall started healthy. Enjoy!!
