This Tuna Salad is for the picky eater. It only has an egg, relish, tuna, miracle whip, and bread.
When I make this recipe, everyone wants a copy of it. It is snapped up as soon as it is served. Will serve at least 12 people. Hope you enjoy.

I modified this from the other versions on here to try to keep it simple. I tried different salsa's and they change the taste drastically. I like the taste of the chunky mild so I went with that.

I came up with this recipe because I wanted some more crunch and flavor to my tuna. If I have plain nonfat yogurt on hand I will substitute that for some or all of the mayo. The ingredients reflect the light mayo.
Instead of Rice, we're using Quinoa. regular fried rice is used with rice (HELLO!??!)...But substituting with quinoa, allows us to get more nutrition and protein from what used to be a completely "carb-only dish"...Healthier Fried "Rice"!

Quick and easy to put together using FF strawberry yogurt instead of mayo. Great with saltines.
