A very low fat salsa chicken full of beans and veggies served over mexi-rice.
I got the inspiration for this from a Mexican-cooking magazine, but made it much simpler. These portions are fairly small, yet very filling!
This is something I threw together- I kind of made it up as I went along! Obviously, you can use more or less jalapeno to taste. If desired, you can also add salt. We like to serve this over white rice with tortillas.

This recipe is from "Clueless in the Kitchen" by Evelyn Raab. I made it with ground pork, but ground beef is great, too. Either way, this chili is delicious, easy to make, and packed with protein and fiber.
