This recipe comes from Mexico. The first time I ate it no-one told me what I was eating. I ate 3 tostadas before anyone would tell me what it was made of. When they told me I would have never tried it had I known, and I would have missed out on a favorite dish of mine and my grandmas.
It may sound like it's unhealthy and scary, but it really is a safe and healthy. I've been eating it for years and never gotten sick.
A spicy solution when you are wanting chili but don't want the meat and don't like tofu.
This is very yummy.. great for lunch or served with a side salad or BQ chicken for dinner.

This is a very simple dish to make, throw all the raw/frozen ingredients into a crockpot, set it on low and come back in 6-7 hours!
Perhaps it’s the lime dressing, which infuses the dish with flavor without overwhelming it in goo. It could be the quinoa, which has a distinctive nutty taste far superior to white rice and its lamer brethren. Or, maybe it’s the tomatoes, black beans, and scallions, which reminded one friend of "the insides of a really good burrito."
Whatever it is, it’ll make you forget uninspired diet food. :-)
This is very tasty and simple. Its best topped with lettuce, fresh tomatos and a little bit of sour cream.
